Spicy Pineapple Glazed Ribs

Spicy Pineapple Glazed Ribs

Ingredients

  • 2 racks St. Louis style pork ribs, membrane removed
  • 2 cups pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp sriracha or other hot sauce
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp onion powder
  • Salt and black pepper to taste

Instructions

    Prepare the ribs by removing the membrane from the back of each rack. Season generously with salt, pepper, and onion powder.

    In a saucepan, combine pineapple juice, soy sauce, brown sugar, sriracha, minced garlic, and grated ginger. Bring to a simmer over medium heat, then reduce heat and let it thicken slightly for 10-15 minutes.

    Set your grill for indirect heat, aiming for a consistent temperature of 275-300°F. Place the seasoned ribs on the indirect side.

    Grill the ribs for 1.5 hours, maintaining temperature. After this time, brush them liberally with the pineapple glaze.

    Continue to grill for another hour, brushing with more glaze every 20-30 minutes, until the ribs are tender and the glaze is caramelized.

    Once the ribs reach an internal temperature of 200-203°F and pass the bend test (they should bend easily without breaking), remove them from the grill.

    Rest the ribs for 10-15 minutes before slicing into individual bones. Serve with extra warmed glaze on the side.
