Ingredients
- 1.5 lbs flank steak
- 1 large red bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 limes, juiced
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 8-12 flour tortillas
Instructions
- 1
Pat the flank steak dry and season generously on both sides with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
- 2
In a large bowl, toss the sliced bell peppers and onion with olive oil, half of the lime juice, and a pinch of salt and pepper.
- 3
Preheat your grill to medium-high heat (400-450°F) for direct grilling. Clean the grates thoroughly.
- 4
Grill the flank steak for 5-7 minutes per side for medium-rare, or until your desired doneness is reached. Grill the vegetables on a grill basket or directly on the grates, tossing occasionally, until tender-crisp and slightly charred, about 8-10 minutes.
- 5
Remove steak and vegetables from the grill. Let the steak rest for 5-10 minutes before slicing thinly against the grain.
- 6
Warm the tortillas on the grill for 30 seconds per side, or until soft and pliable.
- 7
Serve the sliced steak and grilled vegetables with warm tortillas and the remaining fresh lime juice.
Why this recipe works best on a clean grill
A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.
Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
