Mediterranean Lemon Herb Chicken Skewers

Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 large red onion, cut into 1-inch pieces
  • 1 large bell pepper (any color), cut into 1-inch pieces
  • 1 pint cherry tomatoes
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 8-10 wooden or metal skewers

Instructions

  1. 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. 2

In a large bowl, whisk together the olive oil, lemon juice, oregano, thyme, minced garlic, salt, and pepper to create your marinade.

  3. 3

Add the cubed chicken, red onion, bell pepper, and cherry tomatoes to the bowl. Toss everything gently to ensure an even coating.

  4. 4

Thread the marinated chicken and vegetables alternately onto the skewers, making sure not to pack them too tightly.

  5. 5

Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent sticking.

  6. 6

Place the skewers on the hot grill. Cook for 12-15 minutes, turning every 3-4 minutes, until the chicken is cooked through and the vegetables are tender-crisp with nice grill marks.

  7. 7

Remove skewers from the grill and let them rest for a few minutes before serving.

Why this recipe works best on a clean grill

A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.

Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
