Honey Glazed Pork Chops

Ingredients

  • 4 bone-in pork chops (1.25 inch thick)
  • 1 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1/3 cup honey
  • 3 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 tbsp butter
  • 2 sprigs fresh thyme

    Pat chops dry. Rub with olive oil, salt, pepper, and smoked paprika. Rest at room temp 20 minutes.

    Whisk honey, Dijon, and vinegar in a small saucepan. Simmer 3–4 minutes until slightly thickened. Stir in butter.

    Preheat grill to medium-high (425°F) for two-zone cooking.

    Sear chops over direct heat 2 minutes per side to build a crust.

    Move to indirect heat, brush with glaze, and cook until internal temp is 140°F (about 6–8 minutes), glazing every 2 minutes.

    Rest chops 5 minutes tented with foil.

    Drizzle with remaining glaze and garnish with thyme.
