Grilled Prosciutto-Wrapped Peaches

Ingredients

  • 4 ripe but firm peaches
  • 8 slices thin prosciutto
  • 2 tbsp balsamic glaze
  • 1 tbsp olive oil
  • 1/4 tsp black pepper
  • Fresh basil leaves, for garnish

Instructions

  1. 1

Preheat your grill to medium-high heat (about 375-400°F). Clean and oil the grates well to prevent sticking.

  2. 2

Halve the peaches and remove the pits. Cut each peach half into 2-3 wedges, depending on size.

  3. 3

Drizzle the peach wedges lightly with olive oil and sprinkle with black pepper.

  4. 4

Wrap each peach wedge with a half-slice of prosciutto. It doesn't need to be perfectly neat.

  5. 5

Place the wrapped peaches directly over the heat. Grill for 2-3 minutes per side, rotating occasionally.

  6. 6

Look for nice grill marks and for the prosciutto to crisp up slightly. The peaches should soften but still hold their shape.

  7. 7

Remove the grilled peaches from the grill and arrange them on a serving platter. Drizzle generously with balsamic glaze.

  8. 8

Garnish with fresh basil leaves before serving warm, or at room temperature.

Why this recipe works best on a clean grill

A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.

Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
