Grilled Prosciutto-Wrapped Figs

Ingredients

  • 12 fresh figs (Black Mission or Kadota work great)
  • 6 slices prosciutto, thinly sliced
  • 4 oz fresh goat cheese, softened
  • 2 tbsp balsamic glaze
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tsp black pepper, freshly ground
  • Olive oil, for brushing

Instructions

  1. 1

Preheat your grill to medium-high heat (375-400°F). Lightly brush the grates with olive oil to prevent sticking.

  2. 2

Carefully cut each fig in half from top to bottom. In a small bowl, gently mix the softened goat cheese with the chopped rosemary and black pepper.

  3. 3

Spoon a small dollop of the goat cheese mixture onto the cut side of each fig half.

  4. 4

Take one slice of prosciutto and cut it lengthwise in half. Wrap one half-slice around a fig, securing the goat cheese filling.

  5. 5

Place the wrapped figs directly on the preheated grill grates. Grill for 4-5 minutes per side, until the prosciutto is crispy and the figs are slightly softened and caramelized.

  6. 6

Remove the grilled figs from the grill and arrange them on a serving platter. Drizzle generously with balsamic glaze before serving warm.

Why this recipe works best on a clean grill

A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.

Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
