Ingredients
- 4 large Portobello mushroom caps, stems removed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz fresh mozzarella, sliced or shredded
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, chopped or torn
- 2 tbsp balsamic glaze
Instructions
- 1
Clean Portobello caps by gently wiping with a damp paper towel; remove stems and use a spoon to scrape out the gills.
- 2
Brush both sides of the mushroom caps with olive oil, then season the gill side with salt and pepper.
- 3
Preheat your grill to medium-high heat (about 400°F). Place the mushroom caps gill-side down directly on the grates.
- 4
Grill for 5-7 minutes per side, until softened and lightly charred, then remove from direct heat.
- 5
Fill each cap with mozzarella, halved cherry tomatoes, and fresh basil.
- 6
Return the stuffed mushrooms to the grill, moving them to indirect heat if available, or reducing direct heat to low.
- 7
Close the lid and grill for another 8-10 minutes, or until the cheese is melted and bubbly.
- 8
Drizzle generously with balsamic glaze before serving warm.
Why this recipe works best on a clean grill
A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.
Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
