Grilled Caprese Chicken Sandwiches

- 4 boneless, skinless chicken breasts
- 8 slices fresh mozzarella cheese
- 2 ripe large tomatoes, sliced
- 1/2 cup fresh basil leaves
- 4 ciabatta rolls, split
- 2 tbsp olive oil
- 1 tbsp balsamic glaze
- 1 tsp dried oregano
- Salt and black pepper to taste
- Optional: Arugula or spinach for garnish

Preheat your grill to medium-high heat (about 400°F). Lightly pound chicken breasts to an even 1/2-inch thickness.

Drizzle chicken with olive oil, then season generously with salt, black pepper, and dried oregano on both sides.

Grill the chicken for 5-7 minutes per side, or until internal temperature reaches 165°F and char marks appear.

During the last 2 minutes of grilling, place a slice of mozzarella on each chicken breast to melt slightly, and lightly toast the ciabatta rolls, cut-side down.

Remove chicken and rolls from the grill. Assemble sandwiches by placing a cheesy chicken breast on the bottom of each ciabatta roll.

Top with sliced tomatoes and fresh basil leaves. Drizzle generously with balsamic glaze.
