Grill-Seared Garlic Herb Cod

Ingredients

  • 4 (6 oz) cod fillets, 1-inch thick
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 lemon, cut into wedges

Instructions

  1. 1

Pat the cod fillets thoroughly dry with paper towels; this is key for a good sear.

  2. 2

In a small bowl, whisk together the olive oil, minced garlic, parsley, chives, oregano, salt, and pepper.

  3. 3

Brush the herb mixture evenly over all sides of the cod fillets.

  4. 4

Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates to prevent sticking.

  5. 5

Carefully place the cod fillets on the hot grill grates and cook for 4-5 minutes per side, or until the fish flakes easily with a fork.

  6. 6

Once cooked, transfer the fillets to a platter, squeeze fresh lemon juice over them, and serve immediately.

Why this recipe works best on a clean grill

A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.

Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
