Ingredients

  • 1 tube (18 oz) pre-cooked polenta, firm
  • 1 large red bell pepper, cored and quartered
  • 1 medium zucchini, sliced lengthwise into 1/2-inch planks
  • 1 small red onion, cut into 1/2-inch thick rings
  • 2 tbsp olive oil, plus more for brushing
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped

Instructions

    Preheat your grill to medium-high heat (about 400°F). Lightly oil the grates to prevent sticking.

    Slice the polenta tube into 1/2-inch thick rounds. Brush both sides of the polenta rounds, bell pepper, zucchini, and red onion with olive oil.

    In a small bowl, combine oregano, garlic powder, salt, and pepper. Sprinkle this seasoning mixture evenly over both sides of the prepared vegetables and polenta.

    Place the seasoned polenta and vegetables directly on the preheated grill. Grill the polenta for 3-4 minutes per side, until golden brown with nice grill marks.

    Grill the bell pepper quarters and red onion rings for 5-7 minutes per side, until tender-crisp and slightly charred. Grill the zucchini planks for 3-4 minutes per side, until tender with good grill marks.

    Remove all grilled items from the grill and arrange them on a serving platter. If desired, you can roughly chop the grilled vegetables.
