Grill-Fired Sausage & Broccoli Rabe

Ingredients

  • 1.5 lbs Italian sausage (sweet or hot)
  • 2 large bunches broccoli rabe, trimmed
  • 4 cloves garlic, thinly sliced
  • 1/4 cup olive oil, plus more for grilling
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup chicken broth or water
  • Salt and freshly ground black pepper to taste
  • 4 sturdy hoagie rolls or crusty bread

Instructions

  1. 1

Preheat your grill to medium-high heat (about 400-450°F) for direct grilling.

  2. 2

Toss the trimmed broccoli rabe with 2 tablespoons olive oil, sliced garlic, red pepper flakes, salt, and pepper in a large bowl; set aside.

  3. 3

Place the Italian sausages directly over the heat, turning occasionally, until nicely browned on all sides and cooked through, about 15-20 minutes. Internal temperature should reach 160°F.

  4. 4

While sausages cook, create a foil packet or use a grill-safe pan for the broccoli rabe. Add the seasoned broccoli rabe and chicken broth to the packet/pan.

  5. 5

Place the foil packet or pan on the cooler side of the grill, or over indirect heat, closing the lid. Cook for 10-15 minutes, stirring occasionally, until the broccoli rabe is tender-crisp.

  6. 6

Once cooked, remove sausages and broccoli rabe from the grill. Slice the sausages into 1-inch pieces.

  7. 7

Lightly brush the cut sides of the hoagie rolls with olive oil and toast them on the grill for 1-2 minutes until lightly golden.

  8. 8

Assemble by piling the sliced sausage and tender broccoli rabe onto the toasted rolls. Serve immediately.

Why this recipe works best on a clean grill

A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.

Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
