Grill-Fired Chicken and Waffles

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup all-purpose flour
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tsp cayenne pepper (optional)
  • 1/2 cup buttermilk
  • 2 large eggs
  • 4 frozen Belgian waffles
  • Maple syrup for serving
  • Hot sauce for serving (optional)
  • Vegetable oil for grilling

Instructions

  1. 1

Pat chicken thighs dry. In a shallow dish, combine flour, smoked paprika, garlic powder, and cayenne pepper. In another shallow dish, whisk together buttermilk and eggs.

  2. 2

Dip each chicken thigh first into the buttermilk mixture, then dredge thoroughly in the flour mixture, ensuring it's fully coated. Set aside.

  3. 3

Preheat your grill to medium-high heat (about 400°F) for direct grilling. Lightly oil the grates to prevent sticking.

  4. 4

Place the breaded chicken thighs on the hot grill. Grill for 6-8 minutes per side, or until internal temperature reaches 165°F and the crust is golden brown and crispy.

  5. 5

While chicken cooks, place the frozen waffles on the cooler part of the grill for 3-5 minutes per side, or until heated through and lightly toasted with grill marks.

  6. 6

Remove chicken and waffles from the grill. Let the chicken rest for a few minutes before serving.

  7. 7

Assemble by placing a grilled chicken thigh on top of each grilled waffle. Drizzle generously with maple syrup and hot sauce if desired. Serve immediately.

Why this recipe works best on a clean grill

A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.

Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
