Bacon-Wrapped Stuffed Chicken Breast

Ingredients

  • 4 boneless, skinless chicken breasts (6-8 oz each)
  • 8 slices thin-cut bacon
  • 4 oz cream cheese, softened
  • 2 tbsp fresh chives, minced
  • 2 tbsp fresh parsley, minced
  • 1 clove garlic, minced
  • 1/4 cup shredded Parmesan cheese
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • Pinch of salt
  • Olive oil, for grill grates

Instructions

  1. 1

Preheat your grill to medium-high heat (about 375-400°F) for direct and indirect cooking. Clean and lightly oil the grates.

  2. 2

Butterfly each chicken breast by slicing horizontally almost all the way through, then open it flat like a book.

  3. 3

In a small bowl, combine softened cream cheese, chives, parsley, minced garlic, Parmesan cheese, smoked paprika, black pepper, and a pinch of salt.

  4. 4

Evenly spread about 1-2 tablespoons of the cream cheese mixture onto one side of each butterflied chicken breast, then fold the other side over to enclose the filling.

  5. 5

Carefully wrap each stuffed chicken breast with two slices of bacon, ensuring the ends overlap on the underside. Secure with toothpicks if needed.

  6. 6

Sear the bacon-wrapped chicken breasts over direct heat for 2-3 minutes per side, just until the bacon starts to crisp and render.

  7. 7

Move the chicken to indirect heat, close the lid, and continue grilling for 20-25 minutes, or until the internal temperature reaches 165°F.

  8. 8

Remove from the grill, let rest for 5 minutes before slicing and serving. Remember to remove any toothpicks before serving.

Why this recipe works best on a clean grill

A clean grill makes this recipe easier because the grates release food evenly, the heat moves predictably, and old grease does not smoke over the fresh ingredients. When carbon buildup sits on the grate, it can leave bitter flavors, create flare-ups, and make delicate foods stick right when they should sear.

Before cooking, preheat the grill fully, scrape the grate with a bristle-free tool, and lightly oil the surface. If your grill has yellow flames, heavy smoke, stubborn hot spots, or a greasy smell before the food goes on, it may need a deeper cleaning before your next cookout.
